We got to e-meet Carina and learnt about her past and present life. Carina has been through it all, from bullying to anorexia and has now come out the other side a happy, healthy and positive person. She uses her blog to talk about workouts, nutrition, her career and she hopes to inspire along the way.

Lucuma Pancakes

Pancake ingredients:

100 g whole grain buckwheat flour

1 flax egg

1/2 tsp baking powder

1 tbsp rice malt syrup

1 tbsp lucuma powder

1/4 cup unsweetened soy milk

Chocolate sauce ingredients (optional):

1 heaped tsp hazelnut butter

1 tsp maple syrup

1 tsp raw cocoa

1-2 tsp unsweetened almond milk

Mix the ingredients for the pancakes together until smooth. Preheat a frying pan on low to medium heat. Add 2 tbsp of the batter at a time and flip them over when bubbles start to form on top.

Meanwhile make the chocolate sauce. Simply mix all the ingredients together and add the milk a splash at a time until it reaches a thick and creamy consistency. Top with whatever you please. Carina recommend pomegranate and shaved coconut.
